Chile Cheese Grits (ala Ashley)
Good accompaniment to grilled meats.

6    cups      water
2    cups      quick-cooking grits, uncooked
2    tsp       salt
1    tsp       paprika
1    tsp       ground red cayenne pepper
3    large     eggs
4    cups      shredded Munster cheese
1    cup       NuMex green chiles, 
                    roasted, peeled and seeded, chopped

Cook grits per package except using above quantity, of
grits, water & salt.  Mix all ingredients together.
Place mixture into greased custard cups or a baking dish.  
Bake until set and let to cool.  Refrigerate until ready 
to serve.
When ready to serve, reheat the cups or dish of grits in 
a microwave and inverted onto dinner plates or a serving 
plate.  Serve as the starch accompaniment to a meal.  
Garnish with slivers of roasted red bell pepper or a good 
salsa., ~1995
