Chilled Cucumber Soup
A tasty favorite from Judy Ashley's Galley Collection - This recipe has been designed to be made from a small ship's galley and is therefore very simple and takes advantage of a few shortcuts to get the desired result - tasty nonetheless!
4 cucumbers peeled & seeded 1.5-2 cups chicken broth 1 cup sour cream 1 small yogurt 2 large garlic cloves 3 TBS white wine vinegar or lemon juice bunch of fresh mint salt & pepper to taste 1 tsp cayenne pepper chives
Blend all in batches until mixed well. Serve chilled with chives and sprinkle of cayenne pepper.
