Spoonbread

8    oz wt   sour cream
1    pkg     'Jiffy' Corn Muffin Mix (8 oz)
1    pkg     'C&W' Sweet Corn & Black Bean Salad,
                frozen (14 oz), thaw in hot water,
                drain (or use plain frozen corn).
1    can     creamed corn (14 oz)
2    lg      eggs
2/3  cup     milk

Mix all ingredients together and pour into a
greased oven-proof casserole dish.  Bake at
350-400 F until set, about 45+ minutes.

Options: sauted peppers and/or onion
         grated cheese
         cooked bacon or sausage
