Cheese Strata

Great breakfast dish.  This is a very generic recipe.  
All of the quantities are flexible.  Options can be 
almost any leftover, but the basic recipe is very good 
in its own right.  Its a good way to get rid of old 
bread.  Use what ever cheese or combination of cheeses 
you like.  This dish should be assembled and refrigerated 
over night to allow the bread to saturate.

12   slices    white bread, remove crusts if you like
2    cups      shredded Monterey jack cheese
4    lg        eggs 
1    tsp       salt 
     dash      black pepper to taste
1/2  tsp       cayenne
2.5  cups      milk
a few possible options:
     diced green chiles
     sautéed onion and/or peppers
     sausage, ham or bacon
     turkey
Grease 12 x 8 " baking dish. Arrange 6 slices bread on 
bottom. Sprinkle with 2/3 of cheese.  Layer any option(s) 
you might want.  Layer remaining bread slices.  Top with 
remaining cheese.  Beat eggs, salt and cayenne together.  
Pour egg mixture evenly over the casserole.  Cover dish 
and refrigerate overnight (or at least 2 hours). Bake in 
preheated oven at 325 degrees F uncovered 45 to 55 minutes, 
or until knife inserted in center comes out clean.
