Shrimp Stuffed Banana Fritters
Stuffing:
3    oz   shrimp, raw shelled
1/2  oz   pork fat
1/4  tsp  salt
1/4  tsp  msg
1/2  tsp  sesame oil
1    tsp  black pepper
1/2  tsp  cornstarch

2         bananas, not too ripe
2    TBS  cornstarch

Batter:
1/2  cup  flour
6    TBS  water
1/4  tsp  salt
1/2  tsp  baking powder
1    TBS  peanut oil

6    cup  oil for frying

Mince the shrimp and pork fat.  Mix thoroughly with the other stuffing ingredients.

Peel bananas.  Cut each into 3 pieces (figure 1).  Cut each piece into 4 horizontal slices (figure 2).  Coat the cut surface of banana sections with cornstarch (figure 3).  Spread the filling on 12 sections and top each section with the corresponding plain sections to make 12 sandwiches (figure 4).

Heat oil for deep-frying.  Thoroughly mix together the batter ingredients.  Coat each banana sandwich with batter.  Drop banana sandwiches into the hot oil and deep-fry for 3 minutes over medium heat until golden.  Remove, drain and serve.  Makes 12 fritters.

Shrimp Stuffed Banana Fritters

Variation - A sweet glaze makes these fritters an unusual breakfast or desert dish:

In a pan, heat 2 TBS oil and add 1/2 cup of sugar.  Stir over moderate heat until the sugar melts.  When the melted sugar turns golden, toss the deep-fried banana fritters in the sugar.  Place fritters on a greased serving dish and serve.

Use caution with melted sugar, it is quite hot!
