Christmas Cheese Cake
from the Yacht "Millennium
A tasty favorite from Judy Ashley's Galley Collection -
This recipe has been designed to be made in a small 
ship's galley and is therefore very simple and takes 
advantage of a few shortcuts to get the desired result - 
tasty nonetheless!

Crust:
12    oz    oatmeal cookies
1     TBS   dark brown sugar
2     oz    butter
Filling:
24    oz    cream cheese
1     cup   brown sugar
4           eggs
2     TBS   Kahlua
1/2   tsp   vanilla
5     tsp   instant coffee
7     TBS   Bailey's Irish Cream
Topping:
1     TBS   instant coffee
1     tsp   sugar
1.5   cups  whipping cream
Directions: Grind cookies & sugar in food processor. 
Melt butter and mix with cookie mixture. shape into 
pan, cook for 10 minutes at 350 degrees.  Then, reduce 
oven to 300 degrees.  In food processor blend cream 
cheese and sugar. Add eggs one at a time.  Dissolve 
coffee in the bailey's and add to mixture. Add Kaluha,
vanilla and pour over crust. Bake 45 minutes or until 
cheesecake is completely set. Let it cool.
Dissolve coffee and sugar in a little cream. Add this 
mixture to the remaining cream and whisk until thick. 
Pipe cream mixture onto the top of the cheesecake. 
Garnish with grated chocolate.
